It’s time to start using the bushel loads of Basil that grow in our part of the world during the summer. Last night I made chicken parmesan and didn’t skimp on the basil. Really pounding that skinless, boneless chicken and marinating it all day in spices made it so tender. Using panko to lightly crust gave it the crunch I love. Topping it with freshly picked basil made my tastebuds scream fresh! Another example of simple yet tasty ways to approach dinner.
